Here's the granola recipe I use. I can't remember where I got it - somewhere on the internet.
Granola
3 c rolled oats
3 Tbs paked light brown sugar
1/2 tsp ground cinnamon
1/4 teaspoon kosher salt
1/3 c honey
1/4 c vegetable oil
1 tsp vanilla extract
1/2 c small-dice dried fruit
1/2 c coarsely chopped raw or toasted nuts or seeds (*I use raisins, craisins, and toasted almonds)
(*I add 1/4 c wheat germ and sometimes 1/4 c of bran or Fiber One cereal to the oats before cooking)
Heat oven to 300 F and arrange a rack in the middle. Place the oats (*and wheat germ and/or cereal), brown sugar, cinnamon and salt in a large bowl and stir to combine; set aside. Place honey, oil, and vanilla in a small bowl and stir to combine (*I heat it over low heat on the stove until it's a little warm so it mixes together better and is easier to mix in the oats). Pour over the oat mixture and mix until the oats are thoroughly coated. Spread the mixture in a thin, even layer on a rimmed baking sheet (*I line with foil and cooking spray). Bake for 15 min. then stir and continue baking until the granola is very light golden brown, about 5-10 min. more. Place baking sheet on a wire rack and cool the granola to room temp., stirring occasionally, about 20 min. (It will harden as it cools). Add fruit and nuts or seeds to the baking sheet and toss to combine. Store granola in airtight container for up to 2 weeks.
